Healthy Oatmeal Waffles (no flour!) with Nutella and Strawberries

What could be better than a leisurely Sunday morning waffle breakfast with your family? A feel-good, healthy waffle breakfast… and a crazy delicious, chocolatey-strawberry waffle breakfast!

I love waffles but I hadn’t made them in ages and Sunday morning I felt the need… the need to make waffles. I knew there was going to be a learning curve trying a new recipe on my waffle iron but I was up for the challenge! And who could say no to this sweet angel who wants to “help” you make waffles? Not I!

I’m not real big on measuring, so these amounts are approximate.

Oatmeal Yogurt Waffles

1 cup soy milk (I like Westsoy organic plain – no weird ingredients, just soybeans and water!)

2 cups oats

3/4 cup vanilla whole milk Greek yogurt (I like Wallaby Organic. Since I also added vanilla extract, I’m sure plain would work great as well!)

3/4 cup almond (or other nut) butter

1/3 cup brown sugar

1 tbsp maca powder (optional)

1 tbsp vanilla extract

1 tsp baking powder

1 egg

pinch of salt

pinch of cinnamon

1 tbsp olive or coconut oil

Turn on your waffle iron to heat up while you blend all the ingredients in your blender until well mixed, and coat the iron with butter before you pour on the mix. It should be extremely thick. Makes 3 waffles.

The first waffle I made was an epic fail, totally stuck to both plates and split in half when I opened it. Sadness!! I googled “waffle sticking to iron” and made the following fixes: I thickened my mix by adding more brown sugar, almond butter and oats to get to the proportions above, and I also switched from olive oil to butter to grease the plates. The mix was MUCH thicker afterwards, and I was thrilled to have great success with the second waffle! It came out perfectly brown and intact.

These taste really dense and hearty and whole-grain, which I love, and they call for some decadent toppings! We topped them with almond butter, nutella, fresh strawberries from the local farmer’s market (soooo ripe), and real maple syrup.

To enjoy them together as a family, heat the oven on low and keep the waffles warm on a cookie sheet until they are all ready. If you have a starving, impatient toddler, good luck! She always ends up eating first in our house. IMG_2611
